A Simple Steak:
This is in keeping with the theme of simplicity to bring out the complexity. Humans range a wide variety of flavors and body types. None, in my opinion, is superior to the other in any way. They each have a specific quality that makes them unique and delicious all the same. This particular way of cooking them highlights that specific quality.
Ingredients :
1 cup of pineapple juice or honey (whichever is more to your taste)
Salt
Pepper
A cut of meat of your choice, preferably sirloin.
Bone marrow from the femur
Butter (from human milk preferably)
Preparation
Take your cut of meat and sprinkle a large coating of salt on each side. The meat is generally thick and you want the seasoning to permeate deeply into the flesh.
After salting, I recommend you either marinate your meat in either pineapple juice or honey for 24 hours. Optionally you can dry age it, but really who has the time. This may affect the pure flavor, but the important part is the tenderization of the meat. No matter the type, or breed of human, the meat will be incredibly tough. Some more tender than others, but still very tough. The reason being, humans were not bred to be eaten, and while we can correct this, I would recommend against it. It’s too much work. Stick to the pineapple juice. I also find using such a marinade cuts through the richness rather well and adds a surprising amount of depth to the flavor.
Blanch the bones to remove the impurities from the marrow. There can be times that it can add a metallic twang to the meat and that’s generally undesirable.
To cook-
Wash the marinade of the steak then pat it bone dry. Season it lightly on all sides with salt and pepper.
Heat your pan till it’s ripping hot. Till the oil is shimmering and smoke just barely dances off its top.
.Lay your steak gently at its top. Watch it. It will show you things. Listen to it. It will whisper secrets. Leave it like that till a nice golden brown crust has formed, then flip it. Repeat the process on the other side.
Once the steak is nice and browned, turn the heat down low and in your pan, add your butter and scrape in your marrow. It will hiss and it will melt, but it will certainly be delicious. Add this deliciousness to your steak by using a spoon to baste the top of the meat. Do this repeatedly till you feel the steak is the same tenderness as the the base of your hand when you pinch your thumb and your index together.
Remove from the heat and let it rest for at least 10 minutes.
Slice and serve.
